The real salad Niçoise
On almost every menu you will find the summer salad Niçoise. You’re guaranteed not to get it. For most chefs, the primeval version is too simple, not to be honoured. So the farmers’ salad from the surroundings of Nice was served with the most diverse ingredients. The famous super chef Auguste Escoffier (1846-1935) started it, adding boiled potatoes and haricots verts. At that time a mortal sin. But nowadays just about anything is allowed. Except for the followers/restorers of the authentic Cuisine Nissarde, recognizable by a sticker on the window of their restaurant. They still serve the ‘one and only’, consisting of no more than tomato, onion, hard-boiled egg, black olives from Nice, tuna, a dash of olive oil and wine vinegar, a dash of pepper and salt. Served on a plate rubbed with some garlic. Less is more.
